Balinese-style Indonesian fried chicken

What is your favorite animal? Mine is fried chicken 😂😉!

Here I am, serving up Indonesian fried chicken with a bold Balinese spicy sauce!

Ingredients

For the chicken

  • Two chicken thighs (or any part of chicken you like)
  • 2 tablespoons of maïzena flour
  • 1 tablespoons of curcuma powder
  • 1 tablespoons of coriander powder
  • 1 teaspoon of blackpepper
  • 1 teaspoon of salt
  • 1 clove of garlic (minced) or replace with 1 tablespoons of garlic powder
  • 1 shot of water

For the Balinese sauce

  • 2 lemon grass
  • 4 lime leaves
  • 2 shallots
  • 1 garlic
  • 2 small red chillis (or more if you like more spicy 🌶️)
  • Coriander leaves (optional)
  • Salt and pepper
  • Sunflower oil

Methods

For the fried chicken:

  • Put maizena flour, curcuma powder, coriander powder, garlic, salt and pepper into a preparation bowl.
  • Add a shot of water and mix it well.
  • Marinate the chicken and put them on the fridge for at least 30 minutes
  • Heat the sunflower oil over medium heat, then fry the chicken until crispy.

For the sauce:

  • Finely chop lime leaves, shallots, garlic, red chilli, and coriander leaves. Combine them in a small bowl.
  • Finely chop lemon grass, then heat the oil in the pan.
  • Put chopped lemon grass, then cooked until soft.
  • Add the lemon grass and the hot oil into mixing bowl
  • Add some salt and pepper

Served the fried chicken with rice and balinese sauce.
